How do you keep AI essay feedback useful for learning?

I would be interested in hearing how educators and students approach AI-assisted essay revision. My main concern is whether the student understands the changes they make and can explain why those changes improve the argument.
When assessing writing tools for college students during revision, I would focus on the decisions they help the writer make. Feedback that identifies an unsupported claim or an unclear connection between paragraphs gives the student something to investigate. A complete rewrite can make that process harder to examine, even when the resulting text reads smoothly.
For example, consider a sociology essay about remote work and workplace inequality. A paragraph describing lower commuting costs may be relevant, but it still needs to explain how those savings relate to the essay’s central claim. I would ask the student to identify that connection before requesting alternative wording. The necessary revision might involve additional evidence, a narrower claim, or a clearer explanation.
I favor focused prompts for this reason. Asking whether each topic sentence supports the thesis statement creates a manageable revision task. The student can then compare the feedback with the assignment instructions and decide which suggestions to accept.
Source verification needs a separate check. Clear language does not establish that a citation is accurate or that the research supports the associated statement. I would expect the writer to read the original source and check its relevance before retaining the claim.
My preferred final checkpoint would be a brief explanation of two or three substantial revisions. If the student can explain why they qualified a claim, moved a paragraph, or rejected a suggestion, that provides useful evidence of independent judgment. Any assistance would also need to follow the instructor’s requirements for permitted use and disclosure.
How do others handle this? Do you ask students to explain their revisions, retain an initial draft, or demonstrate their reasoning during a discussion? Which approach gives you the clearest picture of what they have learned?
